The West Village has a new place built around the wine list. Rosette opened Tuesday, Nov. 3, at 518 Hudson St., on the corner of West 10th Street, Eater NY reported.

Who is behind it

The owner is Justine Rosenthal, daughter of wine importer Neal I. Rosenthal of Rosenthal Wine Merchant, according to the Village Reader. Day to day, the bar is run by wine director and general manager Lauren Goldfarb, a former sommelier at the two-Michelin-star Jean-Georges, and chef Cali Faulkner, who owns Little Falcon in Brooklyn and has cooked at Eleven Madison Park, The Modern and Verjus in Paris.

The wine

The list leans on France and Italy, with a few rare Swiss bottles, and draws on the small family producers Rosenthal Wine Merchant has worked with for five decades, the Village Reader said. It includes older bottles from the Rosenthal family cellar, and a long by-the-glass list is meant to let guests try unfamiliar producers without buying a bottle. Wine is the only drink on the menu.

The food

Faulkner's menu is French and uses produce from Mad Rose Ranch, the family's farm in Pine Plains, N.Y. Dishes include potato “rosettes” filled with egg custard and leeks and topped with caviar, grilled mackerel with sauces that echo potato-leek soup, and a half golden chicken glazed with honey and miso. Eater also lists oeuf en meurette and a pain d'épice tart with pears. The posted menu had oysters at $4 each, the caviar rosettes at $28 and the chicken for two at $60, according to the Village Reader. Bread service includes brioche from Little Falcon.

The 35-seat room has green velvet curtains, banquettes and bar seats that look into the kitchen.
