Fillings, the mini pie maker, opens its first shop at 272 Bleecker St. in the West Village through Christmas Eve

Fillings, a New York pie company known for palm-sized slices of "mini" pie, has opened its first brick-and-mortar shop at 272 Bleecker St. in the West Village, amNY reported Friday. The storefront is a holiday-season pop-up, and amNY says it will stay open until Dec. 24.

Founder Katie Kaplan started Fillings about a year ago as a drop model, baking small batches for customers to pick up. She told amNY that a permanent counter makes it easier to produce pies consistently and to get feedback from customers in person. The company describes Kaplan on its website as a Marine Corps veteran turned Michelin-trained chef; the shop's chef is Chanah Willis.

• Five permanent flavors: Coconut Key Lime, Milk & Cookies, PB & J, Smoky S'mores and Crème Brûlée, according to amNY.
• Two rotating flavors that change each week.
• Slices, whole 5-inch mini pies, or a pie flight: three slices of your choice, or a nine-slice flight with all five classics plus four more, per the company's FAQ.
• Full 9-inch pies for the holidays by preorder; the site says Thanksgiving preorders are open.
• Fillings-branded apparel and accessories.

• Monday and Tuesday: closed
• Wednesday and Thursday: 11 a.m. to 8 p.m.
• Friday and Saturday: 11 a.m. to 11 p.m.
• Sunday: 11 a.m. to 8 p.m.

amNY notes the shop may close earlier if it sells out. No preorder is needed for walk-ins. Frozen Fillings pies are also sold at Meadow Lane, the company says.
