Dovetail Bakery, which built a following by baking out of a Sunnyside gelato shop, has opened a storefront of its own in Astoria. The shop at 31-05 35th Ave., between 31st and 32nd streets, opened on Tuesday, Oct. 20, Eater New York reported.

What's on the counter

The bakery uses regionally sourced, stone-milled flours and single-origin spices for sourdough, focaccia, cinnamon rolls, cookies and more, according to The Infatuation. Eater counts it as part of a growing number of city bakeries working with stone-milled flour from Northeast mills. The bakery's website lists Ground Up Grain and Coastal Queen Milling among its suppliers.

Plans go beyond pastry. Dovetail will serve sandwiches at lunch and hopes to add afternoon tea on weekends and aperitivo in the evening, Eater reported.

From a gelato shop to its own address

Owner Kate Kadet started Dovetail as a pop-up in 2024. She pitched local businesses on collaborations, and an ice cream sandwich pop-up with her cookies turned into a residency inside Arcobaleno Gelateria on Queens Boulevard in Sunnyside, ABC7 reported in February. With only a tiny kitchen there, she baked in the mornings in the kitchen of the pizzeria next door, which the gelato shop's owners also run, before it opened.

Kadet told ABC7 that the name comes from a woodworking joint, her idea of recipes where everything fits together with no waste. Her signature is the twisted bun shape she uses for cardamom buns and chocolate buns, and she rotates at least one flavor every month or so, she told the station. Her staples have included a pistachio scone with orange blossom glaze.
