China's largest coffee chain, Luckin Coffee, has opened its first two US locations in Manhattan. Known for its cashier-less stores in China (over 20,000!), Luckin's NYC debut presents a unique challenge. NYC has a law prohibiting cashless businesses, a contrast to Luckin's entirely app-based model.
